Why track it  The line is shown the way an inspector reads it — top to bottom, with each critical control point (scald, chiller) checked against its limit in real time. USDA requires carcasses chilled to ≤40 °F; if a CCP deviates, that node turns red and product is held instead of moving to pack.

Why track it  Continuous chill-temperature monitoring is the core food-safety control in a poultry plant. A clear, recorded trend is both an operational tool and the evidence an FSIS inspector expects.
