Why track it  During crush the whole cellar is in motion at once. Seeing every tank's fill, temperature and Brix together is how the winemaker spots a tank running hot or a stuck ferment, and how transfers and blends get planned — a tank over its set point turns amber and jacket cooling kicks in.

Why track it  Each tank ferments on its own curve as yeast converts sugar to alcohol. Watching Brix fall day over day — not just the instant reading — is how a winemaker holds a profile and catches a sluggish or stuck fermentation while there's still time to intervene.
